Ingredients:
- 2 cups of mixed microgreens (120g)
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved (125g)
- 1 English cucumber, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup toasted nuts of your choice (almonds or walnuts)
Lemon Vinaigrette:
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
